Romy Gill's Baigan Bhartha

Serves 2 - 3

Ingredients

  • 1 Medium size Aubergine
  • 2Tomatoes finely chopped
  • 2Onions finely chopped
  • 3 ClovesGarlic thinly sliced
  • 1 tspTomato puree
  • 1 tspGaram masala
  • 1 tspCoriander powder
  • ½ tspTurmeric powder
  • 1 tspBlack Mustard seeds
  • 2 tspRapeseed oil
  • 2 tsp Fresh coriander leaves finely chopped
  • 1 Green chilli finely chopped

Method

  • Roast the aubergine on gas burner over medium heat turning regularly for even roasting.
  • Peel of roasted skin of aubergine once it is cooled after roasting.· Mash the roasted aubergine.
  • Heat the oil in pan, add mustard seeds then add sliced garlic and stir for a minute.
  • Add chopped onions & chillies, cook for 3 – 4 minutes on high heat and keep stirring.
  • Add chopped fresh tomatoes & chopped coriander leaves and cook for two minutes.
  • Add one tsp of tomato puree along with rest of spices and salt, mix well.· Add mashed aubergine, cover the pan and cook for five minutes over low heat.
  • Salt to taste.
